Preparation tools receive less attention and arguably matter more, since they determine how pleasant cooking is on an ordinary evening.

The Genuine Essentials

A very short list covers almost everything: one good chef’s knife, a stable board, a peeler, a bowl, and something to weigh with. Nearly all preparation is possible with those.

Everything beyond that is a matter of what you cook rather than a general requirement, which is why prescriptive equipment lists are usually wrong for any specific person.

The Second Tier

A mandoline, for anything requiring uniform or very thin slices

A microplane, for zest, garlic, ginger and hard cheese

A bench scraper, which is cheap and used constantly once owned

A box grater, which does several jobs adequately

Kitchen scissors, genuinely useful and frequently forgotten

Why a Slicer Belongs Here

Most tools in a first kitchen duplicate something a knife does adequately. A slicer does not: it produces uniform, very thin cuts that a knife cannot reliably reproduce, which opens up preparations rather than merely speeding existing ones.

It is also cheap relative to appliances and stores flat, which matters in a small first kitchen. Compact Japanese designs, of the kind in benriner mandoline ranges, take up less drawer space than a box grater and cover more ground.

Safety From the Start

Anyone equipping a first kitchen is likely to be using a mandoline for the first time. Establishing the habits immediately is considerably easier than correcting them later.

Use the guard from the first slice. Stop before the vegetable becomes a stub. Wash under running water rather than in a filled sink. A cut-resistant glove costs very little and is worth buying alongside the tool rather than after an incident.

Sharpening

A dull knife is the most common problem in a first kitchen and the least recognised. Most people cook for years with knives that have never been sharpened, which makes every task slower and more dangerous.

A basic sharpening stone or a pull-through sharpener costs very little and improves cooking more than most equipment purchases. The same applies to slicer blades, which are replaced rather than sharpened.

Buying Over Time

The useful approach is to cook for a few months with the essentials and note what you actually find yourself lacking. That list is far more accurate than any recommendation.

Second-hand is worth considering for most preparation tools, since they are largely indestructible. The exceptions are anything with a cutting edge, where the condition cannot be assessed reliably and where a dull tool is worse than none.

Equipping a first kitchen usually focuses on pans and appliances.
